After all, the prized delicacy pairs particularly well with classic comfort food.


But what exactly is truffle? Grown underground, it’s a fungus from the Tuberaceae family and takes many years to cultivate. Fragrant, earthy and umami-rich, its flavour is often compared to that of mushrooms but far more complex and intense. The taste also varies with the season – summer truffles, for example, have a more delicate, nutty and creamy flavour profile whereas winter truffles are richer and more robust with garlic notes.

A pantry staple – especially during the season of hearty winter warmers – these truffle breakings, also known as brisures, are specially processed to preserve their flavour for out-of-season use. Black autumn truffles are now available in the Fresh Market Hall. Sourced from Wiltshire in the UK, they’re visually indistinguishable from the summer truffle but have a more powerful aroma and earthy flavour, making them perfect for warming, autumnal dishes. While you’re there, don’t miss the mushroom and truffle croissant on the bakery counter in the Roastery & Bake Hall.
