Trending Now: British Rum

Up and down the UK, a growing number of distilleries are turning sugar cane into spirits, putting their own spin on a drink that mixes magically and sips just as well: rum. From the Isles of Scilly to Glasgow, and from Manchester to Devon, there are now more than 20 distilleries making rum in the UK.

Award-winning drinks journalist Alice Lascelles shares her take on the rise of locally distilled rum with the brands to know in our Fine Wines & Spirits department and the rum cocktail recipes worth adding to your party season rota.

The Rum Brands to Know

Scratch Distillery

 

Scratch Spirits is a distillery located in the seemingly unlikely setting of Hertfordshire, housed in a converted stable block at a historic 16th-century country house. Founded in 2016 by self-confessed ‘rum nerds’ Doug Miller and Ellie Taverner, it marries tradition with a dash of contemporary style. Its flagship expression is Golden Rum, an elegant lightly aged spirit with notes of apple, honey and anise, and a long finish. Uncoloured and unsweetened (unlike a good deal of rums), it is one for purists.

Rude Mechanicals

 

The first UK distillery to make rum in the modern age was the English Spirits Company. Founded in 2011 by former biochemist John Walters, it’s now been making rum at two sites – in Essex and Cornwall – for the best part of a decade. Their weighty Rude Mechanicals Vigneron Rum is matured in French oak casks seasoned with red wine from the Rhône. “The result is quite perfumed, with notes of honeysuckle and freshly ground coriander.”

Old Salt

 

Another rum from the English Spirits Company is its signature Old Salt Rum. “Aged in English oak casks coopered from trees grown on the distillery’s estate, it gives the rum fresh golden tobacco notes, which then give way to darker cocoa and finally vanilla,” Walters explains. “For all our rums, we use stills that we’ve designed and built from scratch, to ensure we get a very clean ‘cut’. We can be very precise about where we take out the good and leave the bad, which means you get a lot less of that spirited ‘burn,’” says Walters.

Outlier

 

One of the newest, and most remote, rum distilleries in the UK is the Isle of Man’s Outlier Distilling Company. Launched by ex-journalist Rick Dacey and distiller and winemaker Ian Warborn-Jones, it unveiled its Hoolie White Rum in 2021. Fermented and distilled in an old milking shed using a wood-fired still, it’s rum at its most elemental. “Hoolie is the Manx [Isle of Man dialect] word for ‘bloody windy’, which it often is on the Isle of Man,” says Dacey. “The rum delivers a malty liquorice gust followed by a charcoal-filtered finish [for smoothness] that’s great for mixing. It makes an absolutely incredible daiquiri.”

Rum Old Fashioned

A

50ml golden/dark rum
5ml sugar syrup
2 dashes bitters – ideally Angostura Orange/Cocoa Bitters or Fee Brothers Black Walnut Bitters

Basil and Honey Daiquiri

A

50ml light/white rum
25ml lime juice
15ml honey syrup*
6-8 basil leaves

*mix a 2:1 syrup of honey and hot water and leave to cool.
